Grilled Salmon: Health Benefits & Recipes
Salmon is a great addition to any BBQ that not only tastes d-lish but also has numerous health benefits. Not all salmon are created equal and it is important to make sure you purchase wild-caught Alaskan salmon as they are in the lowest-risk category for contamination. ‘Wild-caught’ also means the fish enjoy a natural diet (plankton, shrimp, krill, squid and other small fish) which translates into the myriad health benefits that makes this wonderful pink fish a great addition to your summertime fun. Salmon are not only a great source of omega 3s but also very high in Vitamins B12, Vitamin D, selenium and Vitamin B3 and B6!
Grilled Salmon with Dijon-Horseradish Sauce
¼ cup Dijon mustard
2 Tbs whole-grain mustard
2 Tbs prepared horseradish
2 Tbs chopped fresh mint
2 pounds wild-caught Alaskan salmon
2 Tbs organic olive oil
Whisk together ingredients along with salt and pepper (to taste) in a small bowl. Let sit for 15 minutes and then brush sauce onto salmon. Place the salmon the grill for 3-4 minutes on each side and enjoy!
Mango Corn Salsa
1 can Black Beans, 16 oz, rinsed & drained
1 pkg. frozen Corn, 10 oz, thawed & drained
1 cup Mango, ripe & chopped
1/2 cup sweet, red pepper, chopped
1/3 cup red onion, chopped
1/3 cup cilantro, chopped
1/4 cup fresh lime juice
1 tablespoon dried italian herbs
Salt and pepper to taste
Mix all ingredients, cover and refrigerate for a minimum of 1 hr.
Serve on or with your grilled salmon, mmmm!
